SPAGHETTI WITH PRAWNS, CORIANDER AND PEANUTS

SPAGHETTI  WITH  PRAWNS,  CORIANDER  AND PEANUTS:

On the table in 40 min

INGREDIENTS:                                                                            

250  g spaghetti
1.5 litre (6 cups) boiling water
40 (1kg) medium uncooked prawns
1/4 cup (60ml) peanut oil
1  large (350g) red capsicum, sliced thinly
1/3  cup (50g) chopped peanuts
1/3  cup (80ml) lime juice
2  tbsp sweet chilli sauce
1/2  cup chopped fresh coriander leaves

METHOD:
  • Break pasta in half, place in large microwave-safe bowl, cover with the boiling water; cook, uncovered, on HIGH (100%) about 12 minutes or until just tender, stirring twice during cooking. Drain.
  • Shell and devein prawns, leaving tails intact. Combine half the oil, prawns, capsicum and nuts in large microwave-safe bowl; cook, uncovered, on HIGH (100%) about 5 minutes or until prawns change in colour, stirring once during cooking.
  • Add pasta, remaining oil, juice and sauce; cook, uncovered, on HIGH (100%) 4 minutes, stirring once during cooking. Mix in chopped coriander.
