BEEF AND VEGETABLE CURRY:
On the table in 45 min
INGREDIENTS:
1 medium (150g) onion, chopped
2/3 cup (160ml) mild curry paste
1 kg minced beef
1 large (500g) kumara, chopped
1 medium (300g) eggplant, chopped
1 cup (250ml) beef stock
1 cup (125ml) frozen peas
1/4 cup chopped fresh coriander leaves
METHOD:

1 cup (125ml) frozen peas
1/4 cup chopped fresh coriander leaves
METHOD:
- Combine onion and paste in large microwave-safe bowl; cook, covered, on HIGH (100%) 5 minutes, stirring once during cooking. Add beef; cook, covered, on HIGH (100%) 10 minutes, stirring twice during cooking.
- Add undrained crushed tomatoes, kumara, eggplant and stock; cook, uncovered, on HIGH (100%) 20 minutes, stirring twice during cooking. Add peas; cook, uncovered, on HIGH (100%) 5 minutes. Stir in coriander.
