INDIVIDUAL CHEESE AND SPINACH MEATLOAVES:
On the table in 35 min
150 g spinach, chopped coarsely
2 tbsp water
40 g cheddar cheese
2 tbsp barbecue sauce
750 g minced beef
1/2 cup (35g) stale breadcrumbs
3 green onions, chopped
1 tbsp tomato paste
1 tsp seasoned pepper
1/2 tsp garlic powder
METHOD:
- Place spinach and water in medium microwave-safe bowl; cook, covered, on HIGH (100%) 2 minutes, drain. Squeeze excess liquid from spinach; shred finely. Cut cheese into 4 cubes.
- Brush four 1-cup (250ml) microwave-safe dishes with half the barbecue sauce.
- Using hand, combine beef, breadcrumbs, onion, paste, pepper, and powder in large bowl; shape into 4 patties. Make a hallow in the centre of each patty, push one- quarter of the spinach and a cube of cheese into centre of each patty, shape into round patties to enclose filling completely. Press into prepared dishes. Spread remaining barbecue sauce over top of patties.
- Cook,uncovered, on MEDIUM-HIGH (70%) about 12 minutes or until firm. Stand covered, 5 minutes, drain away liquid; turn out patties.
