SAVOURY MINCE WITH FRESH HERBS

SAVOURY  MINCE  WITH  FRESH  HERBS:    

On the table in 45 min
                  
INGREDIENTS:

1   tbsp olive oil
2  medium (300g) onion, chopped
1  large(180g) carrot, chopped
3  cloves garlic, crushed
1  kg minced beef
4  medium (480g) zucchini, chopped
400  g  can tomatoes
2/3  cup ( 160ml) tomato paste
2  tbsp Worcestershire sauce
2  beef stock cubes
2  tbsp fruit chutney
1/4  cup chopped fresh oregano leaves
2  tbsp chopped fresh basil leaves
1  tbsp  chopped fresh parsley
1  cup (125g) frozen peas, thawed


METHOD:
  • Combine oil, onion, carrot and garlic in large microwave-safe bowl; cook, covered, on HIGH (100%) 10 minutes,stirring once during cooking. Stir in beef; cook, covered, on HIGH (100%) 7 minutes, stirring once during cooking.
  • Add zucchini, undrained crushed tomatoes, paste, sauce, crumbled stock cubes, chutney and herbs; cook, covered, on HIGH(100%) 15 minutes, stirring 3 times during cooking. Stir in peas; cook, covered, on HIGH (100%) 5 minutes.
