HEARTY BEAN SOUP

HEARTY  BEAN  SOUP:  

On the table in 20 min
                                                         
INGREDIENTS:

1  tbsp  olive oil
1  medium  (150g) onion, chopped
1  clove garlic, crushed
300g  can red kidney beans, rinsed, drained
400  g  can tomatoes
2  tbsp  tomato  paste
2  cups  (500ml) hot water
1  tsp  chopped fresh oregano
60  g piece spicy salami, chopped
2  tbsp  shredded fresh basil leaves

METHOD:
  • Combine oil, onion and garlic in large microwave- safe bowl; cook, uncovered, on HIGH ( 100%) 4 minutes, stirring once during cooking.
  • Add  beans, undrained crushed tomatoes, paste, hot water and oregano; cook, covered, on HIGH (100%) 10 minutes.
  • Stir in salami; serve sprinkled with basil.
