FISH ROLLS WITH CREAMY DILL MAYONNAISE:

INGREDIENTS:
8 small (800g) white fish fillets
1/3 cup (35g) packaged breadcrumbs
2 tbsp chopped fresh parsley
1 tbsp lemon juice
8 ( 400g) large uncooked prawns, shelled
1/4 cup (60ml) dry white wine
1/4 cup (60ml) lemon juice, extra
30 g butter, chopped
Creamy dill mayonnaise
2/3 cup (160ml) mayonnaise
1/3 cup (80ml) thickened cream
2 tbsp lemon juice
1 tsp chopped fresh dill
METHOD:
- Top each fish fillet with combined breadcrumbs, parsley and juice; top with prawns. Roll fish up to enclose prawns, secure with toothpicks.
- Place fish rolls, in single layer, in large shallow microwave-safe dish; pour over combined wine and extra juice, top with butter.cook, covered, on HIGH (100%) about 7 minutes or until seafood is cooked through.
- Remove toothpicks; serve with creamy dill mayonnaise.
- Creamy Dill Mayonnaise combine all ingredients in small bowl.
