CHICKEN, TOMATO AND LEEK CASSEROLE

CHICKEN,  TOMATO  AND  LEEK  CASSEROLE:              On the table in 30 min
INGREDIENTS:

30  g  butter
1  medium (350g) leek, sliced
1  clove garlic, crushed
300  g  can tomato supreme
2  medium (240g) zucchini, sliced
1/4  cup (60ml) dry white wine
6  (660g) chicken thigh fillets, chopped
200  g button mushrooms, sliced
1  tbsp chopped fresh basil leaves
1  tbsp  chopped fresh parsley

METHOD:
  • Combine butter, leek and garlic in large microwave-safe bowl; cook, uncovered, on HIGH (100%) 4 minutes, stirring once during cooking.
  • Add tomato supreme, zucchini and wine; cook, covered, on HIGH (100%) 5 minutes. Add chicken, mushrooms and herbs; cook, covered, on HIGH (100%) about 12 minutes or until chicken is cooked through, stirring twice during cooking.
