CHEESY LAMB FILLETS WITH QUICK TOMATO SAUCE

CHEESY  LAMB  FILLETS  WITH  QUICK  TOMATO  SAUCE:

On the table in 20 min
                                                                      
INGREDIENTS:

8  (640g) lamb fillets
3/4  cup (150g) ricotta cheese
2  tbsp finely grated parmesan cheese
1  tbsp Worcestershire sauce

Quick  tomato sauce
300 g  can tomato supreme
1  tbsp  tomato paste
1  tbsp chopped fresh parsley
2  tsp chopped fresh oregano


METHOD:
  • Remove fat and sinew from lamb; flatten with mallet until 2mm thick. Spread lamb with combined cheeses, fold fillets in half to enclose filling; secure with toothpicks.
  • Place lamb in large shallow microwave-safe dish; brush with Worcestershire sauce. Cook, uncovered, on HIGH (100%) about 5 minutes or until lamb is cooked as desired. Remove toothpicks; serve  with quick tomato sauce.
  • Quick tomato sauce combine all ingredients in small microwave-safe bowl; cook, uncovered, on HIGH (100%) 2 minutes.
