BACON AND BEEF LOAF WITH PLUM SAUCE:
On the table in 45 min
INGREDIENTS:
Cooking oil spray
6 bacon rashers
500 g minced beef
1 small (80g) onion, chopped finely
1 small (70g) carrot, grated coarsely
2 eggs, beaten lightly
1 tbsp tomato paste
130 g can creamed corn
1 cup (70g) stale breadcrumbs
1 tbsp chopped fresh parsley
Plum sauce
1/2 cup (125ml) plum sauce
1/2 cup (125ml) beef stock
METHOD:
On the table in 45 min
Cooking oil spray
6 bacon rashers

1 cup (70g) stale breadcrumbs
1 tbsp chopped fresh parsley
Plum sauce
1/2 cup (125ml) plum sauce
1/2 cup (125ml) beef stock
METHOD:
- Coat 12cm X 21cm rectangular microwave-safe dish with cooking oil spray, line base and sides with overlapping bacon rashers.
- Using hand, combine beef, onion, carrot, eggs, paste, corn, breadcrumbs and parsley in large bowl; press firmly over bacon in dish.
- Fold ends of bacon over meatloaf. Cook, uncovered, on HIGH (100%) 20 minutes; drain away excess fat halfway through cooking. Stand, covered, 5 minutes before serving with plum sauce.
- Plum sauce combine both ingredients in microwave-safe jug. Cook, uncovered, on HIGH (100%) 1 minute.
