CORNED BEEF WITH PARSLEY SAUCE

CORNED  BEEF  WITH  PARSLEY  SAUCE:  

On the table in 1-1/4 hrs

INGREDIENTS:                      

1.5  kg  piece beef corned silverside
2  cups  (500ml) water
2  tbsp  brown malt vinegar
2  tbsp  brown sugar
1  medium (150g) onion, quartered

parsley sauce
30  g butter
1  small  (80g) onion, chopped finely
1  tbsp  plain flour
1  cup  (250ml) milk
1  tbsp  chopped fresh parsley

METHOD:
  • Rinse beef under cold water to remove excess salt.
  • Place beef in large microwave- safe oven bag with water, vinegar, sugar and onion; secure bag loosely with a rubber band. Place bag in large shallow microwave- safe dish; cook on HIGH (100%) 10 minutes; carefully turn beef upside down.
  • Cook on medium ( 55%) 50 minutes; rotating beef twice during cooking. Stand beef 10 minutes in bag while preparing the parsley sauce.
  • parsley sauce combine butter and onion in medium microwave- safe bowl; cook, uncovered, on HIGH (100%) 2 minutes. Add flour; cook, uncovered, on HIGH (100%) 30 seconds.
  • Whisk in milk and parsley; cook, uncovered, on HIGH (100%) about 3 minutes or until sauce boils and thickens, whisking once during cooking.
