MICROWAVE CHICKEN AND POTATO SLICE

MICROWAVE  CHICKEN  AND  POTATO  SLICE: 

On the table in 45 min
           
INGREDIENTS:

You will need 1 cooked chicken for this recipe.

750  g potatoes, sliced thickly
20  g butter
2-1/2  cups (425g) cooked chopped chicken
6  green onions, chopped
1  small (150g) red capsicum, chopped
30  g butter, extra
1  clove garlic, crushed
2  tbsp plain flour
1/3  cup (80ml) chicken stock
1/3  cup (80ml) dry white wine
1/2  cup (125ml) cream
2  tbsp  French mustard
1  tbsp  mayonnaise
1/2  cup (60g) coarsely grated cheddar cheese
Pinch sweet paprika
2  tbsp chopped fresh parsley

METHOD:
  • Layer potatoes in 2.5- litre  water (10cups) in  shallow microwave- safe dish, top with butter; cook, covered, on HIGH (100%) 10 minutes. Top with chicken, onion and capsicum.
  • Place extra butter and garlic in medium microwave -safe bowl; cook, uncovered, on HIGH (100%) 30 seconds. Stir in flour, water, crumbled stock cube, wine and cream; cook, uncovered, on HIGH (100%) about 3 minutes or until sauce boils and thickens, whisking once during cooking. Whisk in combined mustard and mayonnaise.
  • Pour sauce over chicken in dish, sprinkle with cheese and paprika. Cook, uncovered, on HIGH (100%) 5 minutes. Serve sprinkled with parsley.

  1. This is a very similar recipe to the one in the Women's Weekly Microwave Cookbook p 39. It is delicious and easy. and can easily be adapted to feed a smaller number.

  2. It is 2 teaspoons of French mustard, not Tablespoons!
